2 large round watermelon slices, each about 1 inch thick
2 Tbsp avocado oil
salt and ground black pepper, to taste
2 cups multi coloured grape tomatoes
4 oz either fresh mozzarella, fresh goat cheese or nut cheese, sliced
fresh basil leaves, for garnish
01.Preheat grill over medium high heat.
02.In a small saucepan stir together balsamic vinegar and honey and bring to a boil over high heat. Reduce heat to low and allow mixture to simmer, stirring frequently, until thickened, about 2 minutes. Set aside.
03. Cut watermelon slices into 4 equal triangles. Brush both sides of each watermelon with oil and season with salt and pepper. Grill until warm and grill marked, about 2 minutes per side.
04.Transfer warm watermelon slices to serving plates or a platter. Top with tomatoes, cheese and torn or sliced basil leaves.
05.Drizzle with honey balsamic glaze and sprinkle with some additional salt and pepper if desired. Serve immediately.
