Good morning!!!💛☕️If you are enjoying a s Good morning!!!💛☕️If you are enjoying a slow start to the morning, this skillet loaded veg egg fritatta with goat cheese will serve as the perfect dish. This type of “brunch” is great for us as our morning start time varies from 7 am with Capri to past 11 with Luca l😂. I can make it between those hours and let everyone help themselves!I love a good veg fritatta and this one gets an extra creaminess from a ricotta blend! My little dollie...She makes the kitchen feel fun! My little dollie...She makes the kitchen feel fun! 💛But, seriously it’s not all fun and games when letting the kids help. So I usually reserve this for the weekends when patience and time are in my favor as I want this time spent with the kids to be positive. If I’m in a “mood” (my kids word for me, lol), hurry or tired it’s not going to end well.Here’s some of the ways I let the kids help out:
🍋 using the lemon press
🥬 washing, drying and tearing lettuce
🥚 cracking eggs...not always without shells, lol.
🥑 smashing avo
🧄 pressing garlic
🍌 slicing bananas, and other soft fruit
🥗 assembling the salad
☕️ Making the coffee with both drip and nespresso machine
🍆 spiralizing
🍍 adding ingredients to vitamix for smoothie
🍪 Making cookies
🧇 loading the waffle iron
🍽 setting table which they actually don’t like. Lol.Love to know how you let your kids be involved.And tbh, 2/3 my kids like kitchen time. Guess which one doesn’t? (He also happens to be turning 13 in Feb) 😂😂
Brighten up your weekend with my favorite lemony p Brighten up your weekend with my favorite lemony poppyseed scone🍋! It’s like an elevated muffin, lol! The cashew  glaze is SO yum as well.💛 You could also swap the lemons for oranges, limes or a combo of all 3. Why not?!🍊Baking is always on my weekend agenda, makes all of us happy!Lemon-Poppy Seeds Scones
Prep Time: 25 min
Cook Time: 15-18 min
Servings: 8
Ingredients:
• 2 cups whole wheat flour
• ½ cup organic white sugar
• 1 teaspoon baking powder
• ½ teaspoon baking soda
• Pinch of sea salt
• 1 tablespoon poppy seeds
• Zest of 2 medium lemons
• ¾ cup chilled coconut oil
• ¾ cup full fat coconut milk
LEMON GLAZE
• Juice and zest of a lemon
• ½ cup raw cashews – soaked for one hour
• ¼ cup maple syrup
• 2 tablespoons almond milk
Direction:
1. Preheat the oven to 400°F.
2. In a large bowl mix the whole-wheat flour, sugar, baking powder, baking soda, salt, poppy seeds and lemon zest.
3. Add the cold coconut oil and combine with a pastry cutter or your fingers.
4. Add in the coconut milk and mix to form dough.
5. Transfer the dough onto a well-floured surface and shape into an 8” disc.
6. Slice into 8 triangles and arrange them on a baking tray lined with parchment paper.
7. Bake for 15-18 minutes. Check at 15 minutes and if the top is slightly golden brown and the corners are crisp, they are ready.
8. To make the glaze add all the ingredients into a blender. Blend until the texture is smooth and creamy.
9. Once the scones are cooled, drizzle the glaze over top. Enjoy!
