This BBQ steelhead trout with a smoky paprika rub is the perfect way to kickstart your week of healthy eats. This this rub is actually great with any white fish and with chicken. Make the pineapple salsa I posted the other day; the combo of sweet and spice is a fiesta of flavours! 🍍
1 tbsp ground paprika
1 tsp garlic powder
1 tsp dried thyme
½ tsp kosher salt, plus extra
¼ tsp freshly ground black pepper
1.25 lb Steelhead trout fillet, cut into 4 equal pieces (about 5 oz each)
01. Preheat barbeque over medium heat.
02. In a small bowl stir together paprika, garlic powder, dried thyme, salt and pepper. Rub this mixture all over trout fillets and let sit for 10 minutes.
03. Oil barbeque grills and place fish on grills to cook. Grill trout, flipping once after 3 to 4 minutes, until it is cooked through and flakes easily with a fork, about 8 to 10 minutes total.
OR. You can also grill on top of a cedar plank (just make sure to soak the plank for at least 2 hours to prevent flare up).
