Breakfast Series: Bulgar Citrus Porridge

Curious- are you a breakfast eater? If so, how long do you wait to eat after waking up?

It’s my favourite meal of the day, and I usually have a 2nd breakfast around 10 am, lol!

If you have been loving these new whole grain recipes, you will love this one made with bulgur… remember variety in your diet, provides much needed nourishment for your gut, microbiome, and immune system. Aim for 30 different plant foods each week (whole grains, oats, nuts, seeds, legumes, fruit and veg). If you normally eat oats, try bulgur or farro!

 

Ingredients:

  • 1 and 3⁄4 cup almond milk
  • 1⁄2 cup bulgur – fine ground
  • 1⁄2 teaspoon cinnamon
  • Juice of a medium orange
  • 1 teaspoon orange zest
  • 3 tablespoons honey

Toppings

  • Chopped pistachio
  • Pumpkins seeds
  • Dried apricots – chopped
  • Fresh raspberry
  • Drizzle of honey

 

Direction:

  1. 01. In a medium pot bring the milk to a boil. Stir in bulgur, cinnamon, orange juice, and zest.
  2. 02. Reduce the heat to low and let simmer covered for 15-20 min stirring occasionally every few minutes until bulgur is creamy and most water has absorbed.
  3. 03. Remove from the heat and stir in the honey. Serve warm and good with chopped pistachio, pumpkin seeds, dried apricots, fresh raspberries and more honey.
  4. 04. The porridge will thicken as it cools. Serve hot or chilled with additional coconut milk for desired consistency. Then top with fresh mango, chopped hazelnuts, coconut chips and coconut cream.

NOTE: Extra can be stored in the refrigerator in an airtight container for up to 5 days. It will thicken up further, simply add some of your favourite milk.
