Sunday’s are for?!🙏💛It’s such a glorious morning and with a rainy forecast for our week- we will be outside most of today! But if you plan to do a little food prep for your week, you won’t be sorry with baking up a quick batch of healthy mini muffins. I love having these on hand, and they make a great addition to the kids lunches!Make it your best day as it will help set your energy for the week ahead.🤗Banana Blueberry Muffin
Prep Time: 10 min Cook Time: 17 min Servings: 12 muffins
Ingredients:
• 3 ripe bananas
• 1/4 cup honey
• 1/3 cup unsweetened applesauce
• 1/3 cup coconut oil - melted
• 1 teaspoon vanilla extract
• 1 large egg
• 2 cups whole wheat flour
• 1 teaspoon baking soda
• 1 teaspoon cinnamon
• 1/2 teaspoon salt
• 1 cup fresh blueberries - could use frozen as well
Direction:
1. Preheat oven to 375. Spray muffin tin or line with paper liners. Set aside.
2. Add the bananas into a large bowl. Using a fork mash until smooth. Add the honey, applesauce, coconut oil, vanilla extract and egg.
3. Using a fork mix until combined..
4. Next add in dry ingredients. Using a spatula, mix until wet and dry ingredients are completely combined.
5. Gently fold the blueberries into the batter.
6. Spoon batter into prepared muffin tray. Fill each one about 3/4 of the way full.
7. Bake for 15-17 min or until toothpick comes out clean.
8. Let cool slightly before transferring to a wire wrack to finish cooling.

It’s a classic, it’s delicious, healthy, flavourful and simple!This is the year of patio eating...and I’ve got so many great ideas for you, I can’t wait to share them.! 😋Lemony Herb Yogurt Marinade & Sauce
Makes about 2 ½ cups
2 cups plain, whole milk Greek yogurt
2 tsp lemon zest
3 tbsp lemon juice
1/3 cup avocado oil
4 garlic cloves, minced
2 tbsp finely chopped fresh flat leaf parsley leaves
2 tbsp finely chopped fresh mint leaves
3 tbsp finely chopped fresh oregano leaves
1 tsp salt
In a medium bowl whisk together all ingredients until well combined. Transfer to an airtight container and refrigerate until ready to use.
Tip: This marinade and sauce is fantastic for chicken. Before marinating, reserve about ¾ cup of yogurt mixture and set aside. Coat chicken thoroughly with remaining yogurt mixture and refrigerate from 3 hours up to 24 hours. Remove chicken from marinade, let excess drip off and cook as desired. Discard used marinade. Serve chicken with reserved sauce.

It’s #nationalhummusday, not that I needed a reason to celebrate eating and enjoying this most nourishing spread🥰! It’s most definitely one of the healthiest dips as chickpeas are just SO good for you. Satisfying, creamy, filling, nourishing, and all around good for you; over the years I feel like I’ve made every combo of this dip.This is my roasted carrot hummus, which if you haven’t tried it already it will become a staple in your meal prep. You will be eating this all summer, promise!💛I’ve also made cauliflower, beet, and kale hummus! Which is your favorite, or do you like more of the traditional hummus. Just make sure there’s lots of garlic and olive oil and you are good to go!This recipe can be found on my blog!✨
