You will never cook oats any other way after you try this silky smooth combo of full-fat coconut milk and coconut oil combined with steel cut oats, which are by far the most nutritious kind as they provide significantly more protein and fiber in comparison to their rolled oat friend.

By soaking the oats over night it allows the starches to breakdown and make them easier to digest, as well as soaking allows the hearty oats to cook more quickly. Double your batch as these keep well in the fridge and serve as a quick breakfast or snack. Now, the only question left is, what will be your favorite toppings?

 

Ingredients:

  • 1 cup steel cut oats
  • 2 cups filtered water
  • 1 can full-fat coconut milk
  • 1 tbsp coconut oil

Directions:

  1. 01. Soak oats overnight in filtered water. Cover and leave in fridge .
  2. 02. Next morning rinse the oats in a fine mesh sieve until water runs clear. Bring water and a pinch of salt to a boil. Add in oats along with coconut milk and oil.
  3. 03. Reduce heat to simmer. Cover and cook 25 minutes until most of the liquid is absorbed.
  4. 04. Remove and let sit for a few minutes before serving with your favorite toppings.
