Ginger & Carrot Oat Porridge

Let the season, the weather and natures goodness guide your food choices!🧡 as we shift seasons into less light, and cooler temps, it’s very natural for the body to feel a bit laggy and blah. Nourishing yourself from the inside out will most definitely give your body a boost. Taking care of your digestion/gut health, and the associated immune system (yes 70% of your immune system is in your gut. Nutrition is a strong modulator of immune function. AND what’s also interesting is your gut bacteria connects to your brain thriving the gut brain axis. Hmmm, better gut health ALSO equals better mental health. NATURE is SO smart!

Did you know your gut bacteria subsist on complex carbs and fibres that our own cells can’t digest. A fiber rich diet supports gut health and also reduces the inflammatory response. Add that bee pollen to everything as you move through the months ahead.

Let these carrot cake ginger oats strengthen your gut and immunity all winter long! I’m obsessed as these are quite possibly one of the most delicious oats I’ve ever had!🥕

Ingredients

  • 1 cup rolled oats
  • 2 cups carrot juice – unsweetened if store-bought
  • 1⁄2 cup water
  • 2 tsp grated fresh ginger
  • 1 tsp ground cinnamon
  • handful of raisins

To Garnish

  • 1 cup unsweetened almond milk – divided between 3 bowls for serving
  • 2 tablespoons maple syrup
  • 2 teaspoons bee pollen
  • 2 tablespoons toasted sunflower seeds
  • Dried cranberries or blueberries

Directions

  1. 01. Add the rolled oats, carrot juice, ginger, cinnamon, and 1/2 cup water to a saucepan. Bring to a simmer and cook, stirring occasionally, for about 15 minutes or until the flakes have absorbed most of the liquid.

  3. 02. Check on the porridge add more water if it’s getting dry.
  4. 03. To serve, divide porridge among bowls, add almond and sprinkle the bee pollen and sun flower seeds.

  6. 04. Garnish with a few raisins or cranberries .Enjoy!
