Spiced Pear-Quinoa-Chia Porridge

½ cup water
1 14-ounce can full fat coconut milk – set ½ cup aside
½ cup quinoa – rinsed
1 chopped pear
1 tablespoon chia seeds
2 inches fresh ginger – grated
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla extract
• Full fat coconut milk
• Thinly sliced pear
• Chopped walnuts
01. In a medium saucepan, combine water and 1 1/2 cups of the coconut milk and bring to a boil.
02. Add quinoa and reduce to a medium heat. Cook for 10 to 15 minutes until most of the liquid is absorbed. Add remaining 1/2 cup of coconut milk, chia seeds, ginger, cinnamon, nutmeg, vanilla, & pear. Stir to combine.
03. Remove from heat and let stand for 5 minutes, or until chia seeds have rehydrated and porridge is creamy.
04. Add your favourite toppings with a drizzle of honey. Enjoy!
