The only salad you will need this weekend!🍐🍂
Love a simple salad with a bit of sweet crunch…this fall pear candied walnut salad with balsamic drizzle hits all the notes! I always mix a dressing at the beginning of the week as part of my prep. This one is so easy and matches with many different salad greens.
And I’m curious- who loves nuts in salad and who does not? Leave me a 🙋🏼‍♀️ if you do. My husband always picks them out, lol.🙋🏼‍♀️

CANDIED WALNUTS

  • 1 cup walnuts
  • 1 tablespoon coconut oil
  • 1 tablespoon coconut sugar
  • 2 tablespoons maple syrup
  • Pinch of salt
  • Pinch of cinnamon

  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1 medium shallot – minced
  • Pinch of salt and black pepper

SALAD

  • 16-ounce bag mixed greens – organic
  • 1 ripe pear – thinly sliced, stem and seeds removed
  • ¼ cup dried cranberries
  • ½ cup crumbled feta cheese

  1. 01. In a medium sized skillet heat the coconut oil and sugar over medium-high heat until bubbling. Add the walnuts, maple syrup, salt and cinnamon.
  2. 02. Stirring to coat the walnuts for 3-4 minutes until fragrant and most of the liquid has evaporated. Remove from the heat and set aside.
