Cranberry Orange Dark Chocolate Bark

I had a craving!😍 I find it happens when I’m on #1- a deadline, #2- working from home, #3 – after I’ve done a morning workout (thank you very much Jen Varney of Barre Fitness Port Moody for the killer fitness class today👯🤍), all of which lead me to non-stop thinking of food. Or wait a minute that’s pretty much me every day. Lol!

There’s something about chocolate that just hits the spot. So if you are in the same mood give this delicious Cranberry Orange Dark Chocolate Bark a try…trust me it won’t disappoint!

Ingredients:

  • 2 x 85 grams chocolate bar – preferably 70% dark
  • 3 drops of edible orange essential oil
  • ¼ cup raw unsalted cashews – roughly chopped
  • 2 tablespoons pistachios – chopped
  • 1 tablespoon pumpkin seeds
  • ¼ cup dried sweetened cranberries
  • 1 teaspoon orange rind
  • generous pinch of flaky sea salt

 

Directions:

  1. 01. Add all the nuts, seeds and cranberries into a bowl and set aside.
  2. 02. In a double boiler on the stovetop melt the chocolate. Once melted, remove from heat, and stir in the orange oil.
  3. 03. Cover a medium rimmed baking tray with parchment paper.
  4. 04. Use a silicone or rubber spatula to spread the chocolate evenly over the center area of the baking sheet – aim for about ¼″ thickness.
  5. 05. Sprinkle the nut mix evenly over the chocolate. Lightly use your palms to press the toppings into the chocolate.
  6. 06. Next sprinkle the orange rind and sea salt. Place the tray in the fridge for 1 hour to firm up.
  7. 07. Once the chocolate is completely hardened, use your hands to break it into pieces. Serve immediately, or cover and store at room temperature for up to 1 week. Can be refrigerated for up to a month.
