As a nutritionist, avid recipe developer and mom of 3, my kitchen is always in high use! And now that we’re in 2022, these little things to make my kitchen a little more sustainable go a long way!

In our house, sandwiches are on repeat and the lunch bread is a BIG deal. I absolutely love a warm and delicious open-faced sandwich, and together with Oroweat Organic, I’ve created this Pesto Tomato Cheese melt that really hits the spot. It’s crispy, garlicy and cheesy – I mean these are definitely part of my food language and I’ve shared the recipe below.

 

 

Ingredients –

  • 2 slices of Oroweat bread (100% whole grain)
  • 4 tomato slices
  • 2 slices of sharp cheddar cheese
  • 4 tbsp basil pesto, homemade or store-bought
  • fresh cracked pepper
  • pinch of salt

 

Directions –

  1. 01. Preheat the oven on the broiler setting. Toast the bread slices!
  2. 02. Once the bread is toasted, add 2 tablespoons of pesto onto each slice and spread evenly.
  3. 03. Place tomato slices on top, followed by slices of cheese.
  4. 04. Place in the broiler for about 5-10 minutes until cheese is melted.
  5. 05. Drizzle some extra pesto on top of the open-faced sandwich, and sprinkle with freshly cracked pepper and salt. Enjoy!
