Saturday vibe! ✨ We had such a beautiful snow fall last night, which is definitely welcomed for this at home kinda family day weekend. ❄️☃️

Pancakes or waffles are always on the menu over here, but I always like to make them extra healthy and delish if possible. Say good morning to sweet potato pancakes- your stack has never been better! You guys these are SO good! Luca even said “mom what are these- they are so good.” I waited till after they finished to say it was sweet potato…just in case. Lol.!

Sweet potatoes are one of the healthiest foods, and such a great way to keep your gut happy and healthy.

Ingredients –

  • ½ cup cooked and mashed sweet potato
  • 1 cup almond milk – unsweetened 
  • ½ teaspoon cinnamon or holiday spice blend
  • ½ teaspoon vanilla extract
  • 1 large egg
  • 1 cup whole wheat flour
  • 2 teaspoon baking powder
  • ¼ teaspoon sea salt

Optional Toppings

  • Sliced banana 
  • Berries
  • Coconut yogurt 
  • Maple syrup

 

Directions –

  1. 01. In a blender, blend the sweet potato, almond milk, cinnamon, vanilla extract and egg until smooth.
  2. 02. In a medium bowl whisk together the flour, baking powder and salt. Add the sweet potato mixture and stir just until combined.
  3. note. Add more almond milk if needed for the thinner consistency of pancake batter.
  4. 03. Heat a large pan over medium-heat, cover with cooking spray. Pour ¼ batter into the hot pan, then lower the heat to medium.
  5. 04. Cook until the top begins to bubble, about 2-3 minutes, then flip the pancakes and cook until golden brown on both sides.
  6. 05. Serve warm and top with sliced bananas, coconut yogurt, and a drizzle of maple syrup.
