Fig-Chocolate Bites

Treats don’t have to be sweet, but boy can they ever hit the “spot” when made with the right ingredients. ✨

This is my idea of pure deliciousness… fig walnut squares! The dried figs bring in a hint of sweetness, the cacao a powerful boost of antioxidants and mood boosting nourishment, and the walnuts add tons of protein and omega-3 fats for brain and heart health. Just delicious!

Ingredients –

  • 10 dried figs
  • 2 cups walnuts
  • 2 tbsp coconut oil
  • 3 tbsp cacao powder
  • 1 tsp cinnamon
  • pinch of salt
  • 1/4 cup of shredded coconut

 

Directions –

  1. 01. Add the figs to a bowl of water and allow to soak overnight.
  2. 02. The following day in a food processor, blitz the walnuts until they form a fine crumb.
  3. 03. Remove the figs from the water and place in the food processor with the coconut oil, cacao, cinnamon and salt. Keep the water that the figs were soaking in to the side as you may add it to the mixture later on.
  4. 04. Process all of the ingredients until they are combined and you have a sticky mixture. If you find your mixture is too thick add the water the figs were soaking in one tablespoon at a time until your desired consistency is reached.
  5. 05. Smooth the. mixture on to a tray lined with parchment paper, then sprinkle the top with the shredded coconut.
  6. 06. Cover the tray and allow to set in the refrigerator for at least 4 hours.
  7. 07. Cut into small squares and store in the freezer or refrigerator until you are ready to eat. Enjoy!
