My tastebuds are always calling me to the Mediterranean – the fresh flavours lend themselves to the most delicious foods. Not only is the Mediterranean diet one of the healthiest in the world, but it’s also the most delicious. Olives, garlic, lemon, herbs, fish, tomatoes…and feta cheese!!!
This Herby White Bean Feta Dip gets an A+ in the health and taste department. White beans deliver protein and fiber, and Krinos feta is low cal and low fat in comparison to other cheeses. How amazing is that? Use this dip for crudites, pita, crostini, or as a spread.
How are you enjoying your feta?
1 14-oz can white kidney beans or cannellini beans, drained & rinsed
1 cup crumbled feta cheese
1/4 cup plain Greek yogurt
juice of 1 lemon
3 tbsp roughly chopped herbs such as dill, chives, mint or all three
2 tbsp extra virgin olive oil, more for drizzling
1 garlic clove, smashed
salt and pepper to taste
01. In a bowl of a food processor with the S blade, combine all the ingredients. Process until smooth, scraping down the bowl from time to time. Season to taste with salt and pepper.
02. Transfer into a shallow bowl and drizzle with olive oil.
03. Garnish with fresh herbs of your choice. Will keep refrigerated for up to 2 days.
