Starting the weekend like 🤗🤎🍂An ongoing theme and teaching in our home is that kindness and compassion will always win. #ad The Compassion Flower is a new species of flower developed by @mrsmeyerscleandaycanada with a corresponding hand soap in the same clean and beautiful scent. The kids and I were so excited to put our green thumb to good use with the planting of this seed, through which care, love, nurturing and compassion, a beautiful plant will start to grow. 🌱We have always loved the @mrsmeyercleanday range of cleaning and soap products, and the fresh and uplifting Compassion Flower scent is our favourite!I can’t wait for you to try this beautiful scent! ✨🤍

Soup is always a good idea!🥰🍅 At least once a week, soup is on the menu at our house. It’s such a great way to get in all the nutrition, plus a warm bowl of soup on a cool, rainy fall night just feels so good!
Soup and curries were both how I started my kids eating lentils and chickpeas, which are both such nutritious, hearty plant foods. This tomato soup gets a big boost from the addition of red split lentils which are a personal fav! If you have picky eaters at your table- then give this soup a full blend in your VitaMix or use an immersion blender!Last week I served this with a 4-cheese sourdough grilled cheese (so so tasty)!I hope you enjoy this much as we do!Tomato-Lentil Coconut Soup
Prep Time: 5 min Cook Time: 35 min Servings: 6
Ingredients:
• 3 tablespoons extra virgin olive oil plus more to garnish
• 1 onion - chopped
• 1 garlic clove minced
• 1 cup red spilt lentils - rinsed
• 2 tablespoons tomato paste
• 1 14-ounce can chopped tomatoes
• 5 cups vegetable broth - low sodium
• 1 14-ounce can coconut milk - full fat
• 1 tsp sea salt
• Pepper to taste
• Chopped parsley - to garnish
Direction:
1. In a heavy bottom pot, heat oil over medium heat. add the onion and cook for 3 minutes until translucent, then add minced garlic and sauté until fragrant (1 min)
2. Add lentils, salt, tomato paste and can of tomatoes. Cook for another 3 minutes.
3. Add the veg broth, cover and let it simmer for 20 min.
4. Add coconut milk, and adjust seasonings, cook for another 10 min.
5. At this time use blender if you like to make it smooth. I like it a little chunky so I only pureed a little bit to give it texture).
6. Serve hot, garnish with fresh parsley, drizzle of olive oi.Enjoy!

Happy birthday to my love, Gaetano! Thank you for all you are and all you do. You have taught us so much, and it’s truly a blessing to walk by your side through this life.❤️This weekend we were so lucky to have a celebration with our family and dear friends to honor the incredible person he is. Yet in true Gaetano spirit, he stood up to give his famous speech (he gives the best speeches), he had the room in tears, and you could hear a pin drop as we all held on to every pearl of wisdom he has gained in his 60 years. Gaetano has worked so hard in his life to overcome adversity and be the strong, wise and brilliant leader, doctor, son, brother, husband and dad that he is. He will tell you that no matter what he’s done, his greatest accomplishment and legacy are his 3 kids.Gaetano I’m so proud to be your wife, and we are so grateful for you! May God continue to bless you with health, happiness and endless love!And on a side note- I’m so glad my kids get 50% of your genes (of which they proudly call themselves full Italian, haha), because you age in reverse, lol! Salute! 😂🙏🥳❤️.
